Executive Chef Gary Volkov

Chef  Gary Volkov began his career in the early 1990’s when he graduated at the top of his class at the French Culinary Institute in New York City learning from renowned chefs like Andre Soltner and Jacques Pepin.

Through the years he has worked with some of the best working chefs in New York such as Brian Goode from The Russian Tea Room, Union Square Cafe, Firebird and River Café.

He went on to work alongside Chef Kerry Heffernan at Eleven Madison Park and Tom Colicchio at Gramercy Tavern.  His close association with Danny Meyer’s Union Square Hospitality Group has inspired him to work closely with farmers from Union Square Market using seasonal, local ingredients in his menu creations.

Chef Gary has been featured in numerous publications as well as The Food Network.  He has done a series with PBS entitled “Chefs of The World”.

He began at One If By Land, Two If By Sea in 1999 bringing the ever so popular romantic restaurant to the culinary heights it now maintains. Gary is always looking to excite his customers with new and exciting flavors using the finest and freshest ingredients.

His new American cuisine is inspired by his continued travels to bring the taste of the world to One If By Land, Two If By Sea.
